Food and Workout Recap

Yesterday’s lunch:

Tofu Shirataki noodles sauteed with onion, tomato, and spinach. I then added a tablespoon of vegan cream cheese, a healthy sprinkle of nutritional yeast, garlic powder, salt, and pepper.

I will definitely be making this pasta dish again! Tastes decadent, but isn’t!

Yesterday’s dinner:

Tortilla Pizzas. Can you tell which one’s mine? Perhaps the one that Popeye threw up on?

I used this sauce that I got from Whole Foods. It is really really good, garlicky and slightly sweet.  I used Daiya “cheese” on my pizza and regular mozzarella cheese on Ryan’s.

With some juicy green grapes on the side, this was a quick and easy weeknight meal.

Yesterday’s workout: 25 minutes on the treadmill followed by a 30 minute abs class.

Today’s lunch:

Well, what do ya know? Protein Bar. I had the Vegan Gardens Salad “chickpeas, diced tomatoes, and our house-made Agave Dijon dressing chopped with our Super 6 Salad Mix“.

Lots of veggies crammed in that salad. The dressing is awesome, I might have to try and recreate it at home. Speaking of recreating at home, I recreated what I usually get at Protein Bar, the Vegan Burrito, for dinner tonight.

I first whipped up some quinoa. Read the bag? 4 lbs baby! Thank you, Costco! Then I cooked some black beans (I actually used black soy beans) with diced green chili peppers and enchilada sauce. Layered both on a whole grain tortilla and topped with spinach and Daiya. Done and done. Delicious, easy, and I have even have leftovers.

Today’s Workout: 15 minute ab class followed by a 45 minute cardio hip hop class.

Next on the agenda: Taking a walk with Ryan and Maddux to get some ice cream! Maddux is ready for his puppy cone!

    Your food looks delicious! I haven’t tried tofu noodles or Daiya…I especially want to try Daiya but they dont offer it anywhere near me.

    I have only ever bought Quinoa in bulk….a 4 pound bag is where it’s at!

      Definitely the way to go! I like to buy pantry staples like that and oatmeal in bulk!

    That pizza looks SO GOOD! I’ve also had those tofu shiritake noodles before – they smell FUNKY when you first take them out but once cooked are simply delicious! 🙂

      Funky is right! They do NOT smell good when you first take them out out of the bag. Thank goodness that stink washes off!

    ha ha- my homemade pizza always looks pretty overdone with spinach. People always give me a raised eyebrow, but it SO cooks down…
