Bottomless Pit

I’ve been a bottomless pit all night. I blame this less-than-filling breakfast for starting me off on the wrong foot.

Dry cereal. Can’t even compare with the staying power of oatmeal. Even peanut butter toast keeps me full longer.

Lunch today was Panera.

I chose the You Pick Two – Low Fat Garden Vegetable Soup without pesto, the Strawberry Poppyseed Salad without chicken, and a baguette. Since I got the meal sans pesto and chicken, it was actually vegan. And according to their handy dandy nutritional calculator all of that should have clocked in at < 360 calories. Not too shabby for soup, salad, and bread. Gosh, those baguettes are good! I also had a lovely bottle of lemon flavored LaCroix.

After work I went to the gym and did a 30 minute Sculping Express class followed by 30 minutes of Cardio Kickboxing. I’m glad I got a workout in today because I came home and ate and ate and ate.

Dinner was leftovers from last night. Served up in a bowl this time rather than as a burrito.

Ok, so that may not look like much. In fact, it may actually look unappetizing, but it is by far my most favorite snack lately. Tortilla topped with Earth Balance and nutritional yeast and microwaved for 20 seconds. Ugh. So good. I seriously find myself craving this little concoction almost daily. Must be why we are constantly out of tortillas.

I then had a peanut butter and jelly sandwich before heading to Trader Joe’s with Ryan to get a few things for our camping trip this weekend.

Veggie burgers, veggie kabobs, corn on the cob, chicken burgers (for Ryan), and Peanut Butter Filled Pretzels. You can’t see by the picture, but I’ve already eaten a quarter of the bag of pretzels. I didn’t even wait the 5 minutes it took to drive home, I ripped into that baby in the car. There’s no way that bag is making it camping. I am predicting it will be gone by Friday (and Ryan’s allergic to peanuts so he’s sure not eating any).

Then I ate a couple of chocolate covered frozen banana bites.

And now I just finished a bowl of popcorn. What is with me tonight?

I Broke the Cardinal Rule of Grocery Shopping

I went grocery shopping on an empty stomach. Even worse, I went to TRADER JOE’S on an empty stomach. What was I thinking?!

Forty-five minutes later and $75 poorer I made it out. I was just going to pick up a few things, I swear! At least I stuck to purchasing healthy foods, like fruit…

Hey, a chocolate covered banana is still a banana 😉

I did buy non-chocolate covered fruit as well.

Mango and pineapple, my summer loves! Trader Joe’s has the BEST frozen fruit!

While I put the groceries away I snacked on some Trader Joe’s Horseradish Hummus. YUM! I don’t even think I like horseradish very much, but I definitely liked this hummus. The horseradish gives it a little kick, yet isn’t overpowering.

After snacking, I wasn’t hungry for a big meal, but still wanted something. Since I had just bought tomatoes, mushrooms, basil, and a demi-baguette, I knew exactly what I wanted to make – bruschetta! I topped baguette slices with sauteed mushrooms and tomatoes, fresh basil, and a balsamic reduction.

Mmmm, I could eat that combo every night.
