Return of the Tofu Press

I can’t believe it’s already Friday tomorrow! I’m pretty sure I could handle a 3 day work week every week.

Today’s breakfast was an exact replica of yesterday’s. Only no Christmas mug this time. At lunchtime I grabbed my sneakers and Maddux grabbed his leash (yeah….not really) and we ran to a nearby dog park. He’s still a puppy (7 months), so we are easing him into running by taking him on short runs and getting him used to running by our side.

I made myself lunch when we got back. Also very similar to yesterday’s.

Only I skipped the veggie burger this time and added nutritional yeast. A sliced apple on the side, no surprise there.

After work I went to the gym for an hour long Muscle Max class. I increased my weights last week and stuck with that, so it was pretty tough. I was really feeling it in my shoulders and my biceps. I also happened to notice, while standing there pumping iron, that it looks like I have the chicken pox. I am still covered in red welts from all the mosquito bites I got camping last weekend. Sweet.

Ryan had class tonight, so that means I did what for dinner?

A.) Picked up food from Whole Foods

B.) Made something with tofu

C.) Made something with kale

Answer: B and C

I’ve made this dinner several times for myself and love it every time.

I started with a block of tofu that I had put in my handy dandy tofu press before going to the gym. If you cook with tofu, think about getting a tofu press. They make your life easier and your tofu firmer 😉

I cubed the tofu, marinated it in a mixture of these ingredients,

and then baked it for about 15 minutes at 350°. Use a cookie sheet covered in tin foil and sprayed with cooking spray. No mess.

While that was in the oven, I sauteed kale and onions in a little bit of water and a cube of vegetable bouillon until softened.

At the same time, I cooked up some rice noodles. They only take about 3 minutes to cook, super fast.

When everything was cooked, I added them all to a bowl.

You can add a little more of the tofu marinade if you want extra sauce.

Delicious. There are some leftovers, but they will be lucky to see tomorrow.

 

BLT love

Getting back into work mode after 4 days off wasn’t easy, but some tasty food sure helped.

Sliced banana topped with peanut butter and granola.

And a coffee with almond milk. In a Christmas mug. What?

Lunch was a salad and some fruit.

My salad was made up of spinach, kale, tomato, green pepper, almond slivers, and a veggie burger (Dr. Praeger’s), all topped with Annie’s Goddess Dressing.

The apple slices and grapes were seriously crisp and juicy!

When I finished with work for the day I took my booty to the gym for an hour long cardio kickboxing class. A nice, sweaty, hard workout. Just what I was looking for.

For dinner I made a BLT! I used this for the bacon-

The ingredient list could be better, but hey, sometimes a girl needs some bacon. I used this for the mayo-

And I used spinach instead of lettuce. Close enough.

Ugh. So good.

Five minutes after finishing, I made another one. I just couldn’t get enough.

Let Them Eat Cake

There was a small farmer’s market outside my office building today at lunchtime.

Since we are going out of town (camping) this weekend, I held off on buying anything. Well, except for this.

Cherry Vanilla Bean granola. Quite delicious. After checking out the farmer’s market, I sat outside soaking up the sun for a while. I wasn’t the only one.

Lots of workers were also escaping their frigid offices on their lunch break. It was gorgeous. I eventually headed inside to actually get some lunch. I went to a cafe in my building and made myself a salad from the salad bar.

Brussels sprouts, steamed brocolli, spinach, mango, peppers, etc. All of their salad greens, fruits, and veggies are organic and they clearly label everything that is vegetarian and vegan. Nice. But the best part is the juice bar!

I got an orange, pineapple, strawberry, spinach, carrot, and celery juice. Can you tell I was trying to cram my body with nutrients? I am anticipating my diet this weekend to be less than stellar, so I’m loading up on my fruits and veggies now.

After work I went to the gym for an hour long Muscle Max class. I upped my weights today, so I’m thinking I’ll be feeling it tomorrow!

And then after the gym, I stopped by a boutique called Bazar. They always have the cutest dresses and their prices are very reasonable. Today, I wasn’t looking for a dress, though. I was on the hunt for a purse. And I had success!

The brand is Let Them Eat Cake. I love that a.) it’s faux leather and b.) the straps are convertible so it can be worn over the shoulder or as a crossbody purse.

Now I’m heading out again to pick Ryan up from class. G’Night!

Bottomless Pit

I’ve been a bottomless pit all night. I blame this less-than-filling breakfast for starting me off on the wrong foot.

Dry cereal. Can’t even compare with the staying power of oatmeal. Even peanut butter toast keeps me full longer.

Lunch today was Panera.

I chose the You Pick Two – Low Fat Garden Vegetable Soup without pesto, the Strawberry Poppyseed Salad without chicken, and a baguette. Since I got the meal sans pesto and chicken, it was actually vegan. And according to their handy dandy nutritional calculator all of that should have clocked in at < 360 calories. Not too shabby for soup, salad, and bread. Gosh, those baguettes are good! I also had a lovely bottle of lemon flavored LaCroix.

After work I went to the gym and did a 30 minute Sculping Express class followed by 30 minutes of Cardio Kickboxing. I’m glad I got a workout in today because I came home and ate and ate and ate.

Dinner was leftovers from last night. Served up in a bowl this time rather than as a burrito.

Ok, so that may not look like much. In fact, it may actually look unappetizing, but it is by far my most favorite snack lately. Tortilla topped with Earth Balance and nutritional yeast and microwaved for 20 seconds. Ugh. So good. I seriously find myself craving this little concoction almost daily. Must be why we are constantly out of tortillas.

I then had a peanut butter and jelly sandwich before heading to Trader Joe’s with Ryan to get a few things for our camping trip this weekend.

Veggie burgers, veggie kabobs, corn on the cob, chicken burgers (for Ryan), and Peanut Butter Filled Pretzels. You can’t see by the picture, but I’ve already eaten a quarter of the bag of pretzels. I didn’t even wait the 5 minutes it took to drive home, I ripped into that baby in the car. There’s no way that bag is making it camping. I am predicting it will be gone by Friday (and Ryan’s allergic to peanuts so he’s sure not eating any).

Then I ate a couple of chocolate covered frozen banana bites.

And now I just finished a bowl of popcorn. What is with me tonight?

No Cook Thursday

Whew! While this week went by fairly quickly, I feel like it’s been especially go go go.

I went into the office today. I brought oatmeal with me, but I also got a Grande Soy Latte from Starbucks on the way in. The morning flew by and before I knew it it was 1pm and my stomach was grumbling! I picked up lunch from two different places. First, I stopped at Pret A Manger and got a Miso Soup. At only 50 calories for a medium cup, it’s a nice addition to a meal. I then went to Argo Tea and got a vegan Garden Lentil Salad.

Their salads come in these cute little pots. The nutritional stats were good..

and it was pretty darn tasty as well.

Argo Tea has a couple other vegan salads, as well as some vegan muffins. I also love that Argo Tea has almond milk!

Oh, and I impulsively bought this for a mid-afternoon treat-

Yeah.

After work I hit the gym for my second Muscle Max class of the week. I think it’s about time I increase my weights! And then, as if I didn’t spend enough money on food today, I stopped at Whole Foods and picked up this hunk of delicious love for dinner (I flew solo for dinner tonight)-

Fresh Vegan Lasagna made by a local vegan restaurant called Soul Vegetarian East. I have yet to actually eat in the restaurant (that is on my to-eat list), but I have had several of the items they sell at Whole Foods and let me tell you, it is ridic! So good. I almost shed a tear when I dropped a bite on the floor in my rush to stuff my face.

Now I’m off to pick up the boyfriend from school (he’s working on his MBA). One more workday, then it’s time to play!

Work From Home Cait

Office Cait

Today I was Office Cait. And I was running late, no time to pack breakfast. Starbucks to the rescue.

I had a Grande Soy Latte and Two Moms in the Raw Blueberry Granola. This stuff rocks! Raw, vegan, gluten-free.

With a fantastic ingredient list.

Love knowing I can get something healthy when I’m on the run.

For lunch I had Protein Bar! The usual Vegan Burrito with a lime LaCroix…

After work I hopped on this baby (pretty empty, huh?)

and hightailed it to the orthodontist’s office to pick up my new retainer. I was in and out in 15 minutes, giving me plenty of time to make the Cardio Kickboxing class at the gym. That class is a good one. An hour later, I was a tired, sweaty mess.

Dinner was simple tonight – waffles and leftover tiny potatoes. Carbs with a side of carbs. I had waffle batter frozen from last time I made waffles, so all I had to do was thaw and cook ’em up.

Topped with Earth Balance, granola, powdered sugar, and maple syrup, my sweet tooth was thoroughly satisfied. My salty tooth (?) was not. So, popcorn it was.

Popcorn with Earth Balance and some (ok, a lot of) nutritional yeast. It was darn good.

Now I’m about to put in my brand spankin’ new retainer and hit the sack.

Tiny Tators

I had a great and fun workout at the gym today. I first did a sculpting express class for 30 minutes, then a 15 minute ab class, and lastly a 45 minute cardio hip hop class. The cardio hip hop was a blast, even though I looked totally ridiculous. Oh my, I’m so awkward. I’m a computer geek, not a cool hip hop dancer. I wish I had moves though, the instructor was awesome!

I came home and promptly made dinner. I seasoned and roasted tiny potatoes, which were just fantastic.

I also had another kale salad, only this time I added spinach and tofu.

Ryan had the potatoes, but not the salad.  He hates tofu and hates kale even more, so he had a chicken burger instead.

Time to go snuggle with the puppy. There’s a tornado warning right now and they totally freak me out!
